he equipment used has been stringently selected based on carefully considered criteria:

- two vertical presses (a very old manual press, and a hydraulic wooden cage press) to obtain juice of incomparable purity.

- containers holding very small volumes (mainly barrels and tiny stainless steel vats, from 3 to 20hl) making it possible to craft each plot and each selection separately, thereby producing a host of different blends.
